These “Fine Wines” from the Napa and Sonoma Valleys are made by 2nd and 3rd generation vinetars. They make the wine the way that wine should be. Which means, the wine may need to ferment for 3 – 5 years. Wines found in grocery and liquor stores are fermented in huge tanks for just 3 months using grapes that, sometimes, are not ripe. They then add Sugar and Synthetic Sulfites. This is why some people get headaches the morning after!
